What is the difference between white german shepherd dogs and regular-colored german shepherd dogs?
Color, and the unreasoning prejudice of their owners.
White is one of the founding colors in GSD; it wasn't until decades later that it was abruptly decided that white was a "degenerate" color and it was made a disqualification for the breed ring. In Germany, the SV won't register a white dog as eligible to breed.
Some smart people took the white dogs to heart and have continued to breed them. White dogs still show up in registered litters, just as longhairs do, even though they are disqualified, too.
There are several different registries that have accepted registrations of white GSDs as something else, such as the White Shepherd, the Swiss White Shepherd or the American Shepherd. There's no guarantee that these are purebred GSDs, but they probably are.
One good thing about the various groups of white bloodlines; since they were ineligible for the show ring, you will find very few whites with the extreme rear angulation that AKC show line German Shepherd Dogs have, now, and most also don't have the weird arched backs that so many of the German and Czech dogs have. The whites look like regular dogs, with straight, strong, level backs and powerful hindquarters.
